Bihari Fish Curry With Rice

Bihar's most classic lunch — river fish the Bihari way [2 pieces], and rice. Rohu lightly fried first to seal the flesh, then slow-cooked in a sharp golden mustard oil gravy with turmeric, green chillies and freshly ground spices. Served with fluffy steamed rice. The gravy soaks into the rice. The fish falls off the bone. Best eaten with a lemon squeeze over the top.
